Pork Roast, The Easy Way

Who says a healthy dinner can't come from a box?

Sorry it's blurry. Tonight, my book club was cancelled on account of rain. It's pretty heavy rain, and Californians cannot drive unless it's sunny and 70 degrees. So, rain is a pretty serious weather offense around here.

View from my window.

At around 3pm, I had a snacky, since I still thought I'd be having dinner at 7 with the ladies from bookclub.

Whole Wheat Sandwich Thin w/Natural Crunchy PB and an Apple. Cocoa on the side.

I love this mug. The name of the design is Jazz. That's MY nickname. he he...

So, for dinner, I made pork roast, corn, and toast. This was the most disgusting corn ever. I guess it was freezer burned or something. I didn't eat it.

P.S. This pork roast is actually amazing. I love it. Tasty and saves me time for $5.99... ANY DAY!!!

Ryan being his patient self while I photographed my dinner.
He's a proud supporter of EMW.

Thanks to the unexpected cancellation, I'm taking the rest of the night off. I have no idea what I'm even going to do with myself!!!

I'm sure I'll figure it out. ;-)

Catch you in the morning!

What do you do with your downtime? Read? Knit? Blog?

  1. Ah down time. I have actually had a lot of it over the last three years. Peace Corps is a lot of down time. I read about two books a week and spent a lot of time working in my garden.

Now that I'm back to The s but have no job, I've gotten into my blog and social media. It's a 4-6 hour a day habbit that I will eventually have to give up when I get a real job.

Right now my focus is to get a real job and in the mean time work on getting my blog to be profitable. We'll see what happens.

  4. I don't get a lot of down time but my fav thing ever is reading. I like to change it up with some novels and nonfiction, some magazines, etc. Oh...except for textbooks....I do not like reading those.
