I Miss You Guys!!!

Hey Friends,

I know, I know, I've been MIA. Do I miss you? YES! Does it make me sad I miss out on WAY too much coolness happening in your lives? YES?

But, I promise, I check in way more often than I blog.

I know there are bloggies out there doing the full time school / full time life thing. Obviously, time management is an issue for me. When I have spare time, I tend to nap or exercise lol... The blog has been on the back burner alot, and I do miss it. I'll try to check in a bit more.

What am I learning? Well, besides alot about nutrition and biology, of course, I'm learning that I have to relax. I'm only one person and I can only do so much.

So, I have to not freak out about things like this:

In addition, we now have a new member of our household. My roommate's 16-year-old son. This has definitely changed the dynamic of the house, but besides a few small establish-rules-type-of hiccups, it's been okay.

Alot of changes for a girl who doesn't LOVE changes. :) I just need to figure out how to be calm amidst all the craziness.

Hubby in the Kitchen: Fa-JEET-ahs

Yes, that's right. Tonight, hubby outdid himself for Hubby in the Kitchen.

He's become the resident chef for reals since I've been in school. Like the good hubby he obviously is, he's majorly picked up the slack. He cooked last night. Tonight was Hubby in the Kitchen and he's been helping me wash dishes and lots of other very wonderful things. How awesome is that?!?

Chicken Fajitas

He used lots of fresh bell peppers, which he sliced and seasoned with sea salt and black pepper.

Onions were segregated, of course, as I find them terribly disgusting.

Tomorrow, I have a test in Statistics, Thursday a test in Nutrition and next week a test in Biology! GAH!

Catch-Up (The Action, not the Condiment)

Hi!!!

This week has been busy, fun, hectic and wonderful. All at the same time. School and work have taken up a huge amount of my time. I will update as often as I can. I will read your blogs as often as I can. I think about what ya'll are up to even when I can't read, so don't think I forgot!

Hubby in the Kitchen was fabulous this week... Turkey Burgers w/roasted potatoes and brussel sprouts. Yes, that's a paper plate.

In addition, we had our first ever Lady Gago in the Kitchen... Lemon Pesto Pasta from Clean Eating Magazine. Fantabulous, as well. I love this trend of other people wanting to cook for me. Saves me SO much time!

When You See Crazy Coming, Cross the Street

My title is a joke and also the mantra of my current life. It’s a long story, but let’s just say that sometimes life ushers Crazy right to your front door step; it’s up to you what to do with it from there. Keep in mind what we learned back when television was actually entertaining (aka: back when Buffy the Vampire Slayer was still on television and reality television had not yet infected America’s living rooms): A vamp can only come into your house if you invite him (or her). So it goes with crazy.

Crazy can be your food issues. It can be issues at work, in your family, with your neighbors. Eating it away, screaming at it, throwing things… Not all that effective. So, what IS effective? Elusively blogging about it, eating well, running often, talking ceaselessly to big, strong, handsome people in your life, and then… dealing with it.

One of the ways, I’m attempting to sort out my food crazies is by keeping a nonline food journal (yes, I just invented a word, meaning not-online). I want a journal that doesn’t automatically tally calories and such for me. Numbers stir up the crazies for me. So, I happened to stop at Big Lot today and randomly saw this cute little journal. Considering, my blog is Eat Move Write, I thought it was pretty appropriate...

Yesterday was Labor Day. Ryan and I celebrated by not laboring at all. He played video games almost all day long and I read my book, hung out with my friend and studied a wee bit (school is technically work, but I enjoy it). Lunch was mostly yummy.

I actually didn’t eat everything pictured. My eyes were bigger than my stomach. Baked potato with veggies as a topping and on the side, ¼ piece pita with a bit of hummus, and a hardboiled egg. The chicken pictured here, I gave away to Ryan and the salad was gross. I bought a new brand of Ceasar Light dressing. BLECH. (Vons Eating Right – ew).

Later, I had a beautiful snacky, which Ryan helped eat. A white nectarine and honey wheat pretzels.

For dinner, I made my own version of chicken parmesan. I hate hate hate tomato sauce, so I use a little olive oil and lots of veggies (see the peas in there). I threw some fresh tomatoes on top and a couple small tenderloins of chicken (lightly fried in EVOO w/whole wheat flour for breading). It was actually the first time I’ve fried anything in like 5 years. They were good, though.

Lunch today was a turkey/pepperjack sandwich with steamed brussel sprouts. YUM! I haven't had brussel sprouts in a loooong time.

I got a lot of writing done today. I love productive days! Tonight is Hubby in the Kitchen. He's at it as we speak. Will update tomorrow. Until then, keep track of your crazies, and don't invite them in.

Stretching Your Meals: How do you do it?

Hey guys! Yes, I'm still around. I've kinda taken a sanity break from the blog. Starting school, full-time work has taken its toll. I'm BUSY.

Anywho, here are a couple eats over the week that you haven't seen before.

A remarkable hubby in the kitchen: Maple Baked Tofu w/collard and spinach greens.

And... Another night was Turkey Taco Bake w/Black Beans and Polenta. It was one of my best meals ever. YUM!

I used the turkey bake the next night to make pita pizzas, with just a little cheese on top. Perfect!

One of the most important things about going to school and working and trying to have some kind of life is finding ways to stretch the ingredients of one dinner into other nights. What meals have you found this works well for? Any suggestions?

20 Minute Meal and More

Happy September! Can you believe it's September already? This year has gone by at the speed of light. I swear it was just yesterday Ry and I were celebrating a new year and looking forward to our March wedding!!!

This fall is shaping up to be a busy one with school and work, but so far my juggling has been successful. Cross your fingers I keep all the balls in the air.

Last night, I made a tasty 20-minute supper (HA! Rachel Ray take THAT!). More and more, you will probably see these sort of meals pop up on my blog, as homework has taken over a HUGE portion of my time. I used a box of Whole Grain Rice-a-roni, made per instructions, except that I threw in some frozen peas I needed to use up and some fresh spinach.

Meanwhile, I browned some chicken with sea salt, crushed black pepper and garlic powder in some EVOO.

I paired my chicken/rice with leftover chicken ceasar salad from the night before, as I'd already had a pretty carby day. (On a baby plate.)

Later, while doing hordes of math homework, I was craving something yummy and decadent-feeling. I cut up a banana, smeared it with PB & Company's Chocolate spread and also some crunchy pb and broke up a couple pretzels on top. Yum!

This morning's breakfast was an ezekiel muffin with the pb/choc spreads. And a banana.
