Onions Welcome Here... What?!

Hey guys! It's winter in San Diego. Monday, it was like 90 degrees. Today, 55!!! FREEEEEZING. (To me, anyway...) :)

So, this morning, I hit the ground running. I had a tough time sleeping last night and when I opened my eyes, I only had 20 minutes before I had to be out of the house. Mad dash!!! No pictures happened. Sorry.

Last night's dinner was French Onion Ground Turkey Skillet. Onions? Did I say onions?

Yep, this dinner is an exception to my "No Onions Welcome Here" rule.

Lunch today was prettier than it was tasty. I had some leftover whole wheat farfalle. I tossed it with a bit of pesto, kidney beans and broccoli. Cut-up apple on the side.

It's a Wrap!!!

Lately, I've been back in my "wrap" moods. Remember when I was eating them all the time? Well, they're baaaaaaaaaacccccck.

Today's lunch was the usual broccoli, kidney, hummus wrap with an open sided-fold (much like the envelope fold without the extra "fold"). Yes, I'm a connoiseur of wrap folds, and you are just jealous.

Right now, I'm having a spot of coffee and working on Biology. The weather has turned cold her in Southern California, so I'm wearing one of those (fakey) velvet jump suits. I love it!!!! I also love winter hats, scarves, boots, and sweater dresses.

Food and Passion

The past few days have been dedicated to studying (I know, so shocking, right?), so alot of my meals were served with a side of homework. :D

Breakfast and a Trader Joe's Trip

Good Morning Beautifuls,

It's another warm day here in SoCal. We're all very ready for Fall, and this re-emergence of warm weather is NOT welcome. Boo. :(

I'm out of english muffins (and just realized I didn't buy any more), so I had two slices of Ezekial Cinnamon-Raisin Bread w/PB and a small apple. Along with my Candy-Cane mug of 8th Continent Light Chocolate Soy Decaf. Yum.

After breakfast, Mr. Myers and I hit up Trader Joe's. I had already put all the groceries away when I realize I hadn't taken any pics. So, I brought a few items back out for a photo shoot. this is a small portion of what we bought, but you'll get the idea.

No-Fat Pumpkin Brownie Muffins

Well, this is what I have to say about the No-Fat Pumpkin Brownies... Meh...

I was expecting them to be awesome, but they were just okay. Basically you use a reduced sugar devil's food cake box mix and 1 (15oz can) Pumpkin. Mix and bake for like EVER. (No eggs or fat added.) They had a really strange consistency. Almost like a soft fudge. Like, I said, meh.

Last night's dinner was Havest Wheat Mac n Cheese w/green beans and kidney beans. All in a bowl. I actually made some chicken tenderloins, but I wasn't in the mood for meat. It was good.

I didn't try the muffin last night because I ate so much batter (batter is AMAZING... like chocolate-pumpkin moose). Is that how you spell moose you eat?!? So, anywho, this morning, I had a muffin, a pear and some scrambled eggs. I know. Weird combo.

I think my Nutrition test went well yesterday. I have my fingers crossed! I'm getting ready to go study for my upcoming Biology Lab test. Yikes! Wish me luck!

(Almost) Vegetarian Awesomeness

Tonight's dinner was crazy good. It was (almost) vegetarian. Almost, because I used some chicken stock in my rice. Otherwise, it was a cornucopia of vegetarian awesomeness.

The brown rice included chicken stock/water, spinach and a 1/2 can kidney beans (dark red). On the side, we had baked asparagus w/Mediterranean Sea Salt and Ground Black Pepper.

I studied while I cooked, while I ate and now... back to it.

I'm Scared to Start, Cause I'm Scared I'll Quit


I'm currently jamming to "Fear" by Jazmine Sullivan with such great lines as the one in my title and others such as "This may sound silly, but it's true, so don't pretend this ain't you too" - I highly recommend it.

Today was a weird day. I started off the day with a breakfast that will be familiar to you.

Chocolate Oats w/Almond Butter on bottom and a Nanner on the side.

Then, I bounded off to class, where my fellow classmates and I waited for over 20 minutes for our biology professor to show. No show. Booooooo. It's a 7:30am class. WE were all there. Where the halibut was HE?

So, me and my friend Isela hit up the cafeteria and talked until we had to go our seperate ways to our next classes. (Mine was Statistics... Ugh.)

After school, I was ravenous. Inspired by my friend who sent a recipe about hummus-egg salad, I had two hardboiled eggs and a slice of whole wheat toast. Unpictured. Then, I studied... Imagine that.

I had planned to hit up the Living Room Cafe to study all.day.long today, but decided that I'd save the coffee/lunch money and stay here. I whipped up a lunch fit for a queen, if I do say so myself.

Morningstar Farms Veggie Burger w/teeeeeny sprinkles of 2% cheese on 1/2 whole wheat english muffin, alongside a beautiful bed of spinach with a whole cut-up roma tomato and a small apple, all mixed with orange champagne vinegar from Trader Joe's.

Then, it was back to studying for my nutrition test tomorrow. Somewhere around 2pm, I fell asleep in my chair for like 15 minutes. When I realize I was falling asleep, I thought, "Ok, I'll lay across the bed here and rest for another 15 minutes." A nice little catnap, right?

At 3:30, I woke up. An hour and a half, people. I lost an hour and a half of precious study time!!! NOT acceptable. I'm getting plenty of sleep at night. Honestly, I think I'm just worn out. I basically am at the gym, in class, studying or working from 5am to 9:30pm every single day. I guess the ocassional nap is forgivable. But barely... lol.

After my princess sleep, I needed some fuel.

Wedding Fun

We're currently watching the Colts beat the pants off the Titans!!! Wahoo!!! (Did I mention we're from Indiana?

8th Continent Yum Factor

Heya...

How's it going? I'm doing good. School is going well. Busy as ever. I got a 93 on my nutrition test, which was hard, so I was happy. I got an 88 on my super duper difficult Bio test. I was kinda happy. I would have been happier with an A.

Lately, alot of my food is pretty tame. Today was a bit more interesting, so I thought I'd share.

I was over at Henry's this weekend and 8th Continent Chocolate Soy was on sale. Before you gasp in horror (because we all know 8th Continent is the WORST soy milk ever), I don't drink the stuff straight up. Silk, yes. 8th Continent, shudder. Anywho, so I've been using it in my coffee. I don't use much, but it gives me that almost-as-good-as Starbucks taste without the stupid $3.85 price. Ouch. On the days I need the atmosphere, I'll pay that price, but if I just want coffee. Home it is.

This morning, I experimented by using it in my oatmeal. I always make my oatmeal 1/2 milk, 1/2 water. I used a teaspoon Almond Butter in there as well. It was really good. Reminded me of Cocoa Wheats, which I don't eat because Oats have more fiber. Banana on the side. Excuse the blurry picture. You know the story w/my crappy camera.

No snack today, but I had a slightly early lunch because of it. Small baked potato w/a smidge of cheese and black beans. A tiny bit of 0% greek on top. Maters on the side. I'm working on my colorful veggie intake. I tend to avoid non-green veggies for some reason.

Ok, so today is a writing day, which means I'm off to Starbucks. Why Starbucks? Because they don't have internet and I actually get work done. Since I live in a house with 3 men, two of which are home all day long, and my office is in the dining room (open to living room), getting writing (which, for me, requires alot of concentration) is just not an option. Yet, somehow starbucks with its hustle and bustle works perfectly. Go figure. I don't get it either.

Spontaneously Beautiful Life


Last night, Ryan presented me with a randomly beautiful and unexpected dinner. He even garnished it with fresh veggies. It was precious, as is he. It occurred to me that my recent episodes of feeling sorry/sad/frustrated with myself for not being able to do it all like other bloggers seem to do.
I think I have to accept that I live a crazy, random, busy, beautiful life that simply cannot encompass all the comings and goings and the north-south-east-west direction of my life.
I've decided that I'm not going to close my blog (it's been rolling around my mind). I enjoy way too much reading all your blogs and, though I can't blog every day as I once did, I do want to keep you up when I find the time. So, that's that.
In other news, I am doing well in school. It's where all my energy is, of course, and my grades are showing that. I'm so ready to be done and to finally say I'm a dietician.
I've decided to lose 10 pounds. I feel that I should be slimmer as a dietician. Nothing drastic, just upping my exercise. No change really in eating, because I already eat very well.
That's basically all for tonight. Now, I'm going to get back to studying after catching up on some of your blogs.
