Anywho, here are a couple eats over the week that you haven't seen before.
A remarkable hubby in the kitchen: Maple Baked Tofu w/collard and spinach greens.
And... Another night was Turkey Taco Bake w/Black Beans and Polenta. It was one of my best meals ever. YUM!
I used the turkey bake the next night to make pita pizzas, with just a little cheese on top. Perfect!
One of the most important things about going to school and working and trying to have some kind of life is finding ways to stretch the ingredients of one dinner into other nights. What meals have you found this works well for? Any suggestions?
YUM-O! I haven't figured out how to cook tofu yet so I'm totally jealous! Looks great!
ReplyDeleteI sometimes make a pasta salad or bean salad and keep some in the fridge for the next day (to take to work) or cook a whole chicken then sort out into portion sizes and freeze.

Wow you guys make some delicious looking meals! Why with my luck do I come over the night you guys order pizza? So not fair!

BEANS!!! (making a chili for example) Any sort of legume goes a loooong way. As well as making things with rice, or some other grain like that. You can spice it up by using different condiments on different days if you get bored easily :D Soups are awesome too.. or stews what have you.
ReplyDeleteOh my gosh, your tofu looks amazing! Recipe please! :o) Now I want to make polenta, but who has time. Dear me I have spent the passed few days with my head in a book hiding in the cave. I don't know how you do it. Your class load is harder than mine. Maybe I am just brain dead, stats is killing me. :o) We just keep eating leftovers night after night. When something is gone, I make something new and we eat that for the next 2 or 3 days. Boring, but nutritious.

ReplyDeleteI'll do several meals in one week that use the same ingredients- like chicken- cook it once- use it one night with pasta and marinara, use it again in fajitas, use it again in grilled chicken salads...

Maple baked tofu sounds awesome. I love tofu with greens.
ReplyDeleteTo stretch my meals out, I soak and cook either cannelini, kidney, or black beans and make those stretch out several nights of the week. (Also makes the money stretch a bit.) :-)
