Pork Chops, Mexican Squash, & "Fried" Rice

I love having dinner with a good friend. It brings me back to myself.

Tonight, our good friend, Jess, came over for dinner. Jess is our cupid. She introduced us, and I guess you could say she was the one who pushed play on our love story. We are grateful.

Here we are the night she introduced us (pictured with her). We were so ridiculously into each other from the start.

Anywho... enough of that... I made pork chops, mexican squash and "fried" rice for dinner.






(Yes, I ate that whole pork chop!!!) I don't really fry the rice. It just looks that way. I boil brown rice in a mix of 1/2 chicken broth and 1/2 water. Then, I throw in some mixed veges. It's a great alternative without all the calories. I didn't eat more than a bite or so of the squash. Too much food!

I am really behind work-wise, so this will be a working weekend. However, I'm about to say forget it for the night and curl up on the couch beside my hubby.

  1. I cook rice in a chicken or vegetable stock, I think it adds flavour to the rice.
