Hubby in the Kitchen: Tuna Noodle Casserole

Yep, that's right. Another Hubby in the Kitchen tonight. It's really becoming a series, and I cannot tell you how exciting that is! One night off a week is a HUGE help to me, and I'm so very appreciative.

Before I get to that, I want to tell you about my afternoon. I met my lunch buddy at Urban Solace in North Park. The ambiance is urban-European; the food is a mishmash of wonderment. I ordered the Monte Diego. It was accompanied by a side of sweet potato fries. It was wonderful. I definitely didn't eat it all, maybe 3/4. It was completely worth it. Loved it! And, my photographer friend didn't make fun of me at all for taking pictures. He did however suggest I turn the flash on. It still isn't a beautiful picture. Like I told him, it's an art (and I'm no artist).

Baked Egg Bread, Smoked Ham, Fontina Cheese, Grilled Pears, Strawberry-Currant Jelly

I decided to go to school early and run a couple miles on the track (did it! no stopping). I had a quick snack beforehand of cauliflower and a cheese stick. Not too impressive, but it got me through my run and class.

When I got home from class, dinner was in full swing. Tonight, Mr. Myers made Tuna Noodle Casserole using whole wheat noodles. Fantastic! I love love love Tuna Noodle Casserole, and having it made for me tastes even better.

I paired my casserole with a simple green salad (spring mix, zucchini, tomato and a few sliced almonds mixed together with a touch of orange champagne vinegar). Delish!

This evening is really beautiful, and I'm hoping I can talk my personal chef into going on a twilight walk. We'll see.

    And that sandwich place sounds like they must specialize in making sandwiches to write home about!

    Congrats on your run! How long have you been running for? I am tempted to give it a try but think I'd only be able to run about 100 metres and would lose motivation VERY fast!

  6. seriously lucky! now i'm mad again! no fair! how does he know how to make all these things?! lol. when i fly out i'm dropping M at your house to take some classes from that man!

    the casserole looks CRAZY! i just woke up and its 7:12am, and i... am... drooling. hhaha. he put all the right ingredients in there. i'm jealous once again :P

  8. Don't you HATE using flash in restaurants? Sometimes it's necessary, but I always want to hide under the table afterwards.

    That casserole looks yummy- your hubby is a keeper!
