Before I get to that, I want to tell you about my afternoon. I met my lunch buddy at Urban Solace in North Park. The ambiance is urban-European; the food is a mishmash of wonderment. I ordered the Monte Diego. It was accompanied by a side of sweet potato fries. It was wonderful. I definitely didn't eat it all, maybe 3/4. It was completely worth it. Loved it! And, my photographer friend didn't make fun of me at all for taking pictures. He did however suggest I turn the flash on. It still isn't a beautiful picture. Like I told him, it's an art (and I'm no artist).
Baked Egg Bread, Smoked Ham, Fontina Cheese, Grilled Pears, Strawberry-Currant Jelly
I decided to go to school early and run a couple miles on the track (did it! no stopping). I had a quick snack beforehand of cauliflower and a cheese stick. Not too impressive, but it got me through my run and class.
When I got home from class, dinner was in full swing. Tonight, Mr. Myers made Tuna Noodle Casserole using whole wheat noodles. Fantastic! I love love love Tuna Noodle Casserole, and having it made for me tastes even better.
I paired my casserole with a simple green salad (spring mix, zucchini, tomato and a few sliced almonds mixed together with a touch of orange champagne vinegar). Delish!
This evening is really beautiful, and I'm hoping I can talk my personal chef into going on a twilight walk. We'll see.

Don't you HATE using flash in restaurants? Sometimes it's necessary, but I always want to hide under the table afterwards.
