English Muffins in the House!!

I heart English Muffins! We finally have english muffins again, and I'm thrilled. It's my very favorite breakfast. Whole Wheat English Muffins with natural peanut butter and low sugar grape jelly, a clementine on the side.

My mid-morning snack will be yogurt and a snack mix I threw together with random stuff in the cupboards.

-Cheerios
-Pretzel Twists
-Almonds
-Dried Fruit

This morning I didn't go to the gym. Monday's are always hard for me to get up so early, especially if I slept in at all on the weekend (which I did). I know tonight we'll be lifting weights in class, but I really need to get in some cardio. I can maybe do a quick run/walk when I get home if it's still light outside. Cross your fingers the sun holds!

WEEKEND RECIPES (Per your request)

"White Castle" Turkey Burgers
1lb ground turkey
1 packet dry onion soup mix
1/4 cup water
1/2 chopped medium tomato

Hand-mix all ingredients in large bowl. Separate into four equal parts and form mixture into balls.

Use a non-stick cooking spray to coat your warmed skillet. Place meat balls into skillet and flatten with a spatula. Cover and cook on medium for approximately 7 minutes. Turn, cover and cook for another 5 minutes.

Note: Be sure to use a meat thermometer to check that they're done. Approx 155F is done.

Serves 4.


Super-Easy Peanut Chicken
1/2 pound chicken breast, cut into bite-size pieces
1/4 cup water
1 tbsp natural peanut butter
1 tbsp chopped garlic (less if you're not a huge garlic fan)
Few Good Shakes of Black Pepper
Light Shake of Italian Seasoning
1 tbsp olive oil

Heat oil and garlic over medium heat. Add chicken. When chicken begins to turn golden, add water and cover. Cook on medium until water is almost evaporated. Add in peanut butter and seasonings. Cover until peanut butter melts. Stir well and immediately remove from heat. Let stand approx 2 minutes to thicken.

Serve with brown rice.

Serves 2-4.

  1. that's it? That's all that the white castle burgers are? Good lord, I for some reason expected a huge list of ingredient! SO EASY!!!

    AND...I can't wait to try the peanut chicken! I heart peanut butter, so anything peanut butter-y taste is a-okay in my book!
