A Weekend of Domestic Bliss (and Food!)

It's our anniversary week! March 7 is our 1 Year Anniversary!

It was a foodie weekend, but busy. How are you my friends?! I'm sorry I'm just now catching you up.

Saturday, we hit the gym bright and early. We spent the rest of the day dedicated to our exciting new home - our apartment!!! EEE!!! Before that, though, we had a yummy chicken burger lunch.

I had mine with baked sweet potato fries. For some reason, Ryan has an aversion to sweet potatoes. They are SO good.

After lunch, we went over to pick out linoleum at our new apartment. Cute! Love it! Then, we hit up Lowe's to pick out paint for our living room. We picked Valspar Churchill Hotel Olive. Ryan picked it, but it's PERFECT! Then, we hit up Ikea, just because it's awesome. Such a fun day!

Saturday night, I made a yummy chicken, broccoli, and rice bake using Cream of Mushroom soup. So good!



Recipe: Chicken, Broccoli, and Rice Bake

Ingredients

1/2 pound of chicken (or 5 small tenderloins), chopped
1 can cream of mushroom soup (I used healthy request)
1 can of Nonfat Milk
1-1.5 Cups chopped fresh broccoli
1/2 cup Chopped Fresh mushrooms
2 Cups Uncooked Rice
Salt and Pepper to taste, if desired
Nonstick cooking spray

Directions

Preheat oven to 375 degrees. Mix rice, broccoli, mushrooms, soup and milk together. Add in chopped chicken and mix until all ingredients are coated with liquid. Spray 9 x 13 baking dish with nonstick spray. Pour mixture into pan and level with a spoon. Cover with aluminum foil and bake for 40 minutes. Uncover and bake for 5-10 more minutes.  

Easy! Delish!


Last night, I made Chorizo and Sweet Pepper Spaghetti.

Basically, I just use soy chorizo and sweet peppers along with a jar of spag sauce. Nothing fancy. Just delicious food. That's all. :D




Today has been a good, productive day. I'm about to head over to the library to pick up some books when Ryan gets home. Other than that, it's looking like a low key nite. I'll probably write some articles, per ususal.

If you can't say Friday, what's your favorite "Week Night"? Mine is defnitely Thursday. I have no idea why, but when I wake up on Thursdays, I'm always happy because Thursdays seem like a special day.

  2. I love how easy these meals appear. I personally love sweet potato fries. They are my favorite side for burgers now. When done right these fries are sooo good!

  5. My second favorite weeknight (next to Friday) is Wedneday. I always have a great workout Wednesday evenings, and guilt I feel from the weekend (food, drinks, parties, shoppint) is gone, and there are only 2 work days left before the weekend!

  6. I like sweet potatoes but for some reason sweet potato fries... not that much. Baked are fine but actually fried sweet potato fries are just not really tasty to me!

    My favorite week night is definitely Thursday. I love knowing that the next day is Friday and weekend is around the corner.

    I think I need to get Tom (husband to be) in the kitchen more often - your Ryan looks very much at home in front of the stove!

    For my favorite would be Tuesday, because I work from home on Tuesdays so it seems like a weekend day is coming! And also Thursday because I like to wear something cool on Jeans-Friday :)
