Chicken and Cabbage Fantastico

Heya Blog World. It's FRIDAY!

I just returned home from a glorious 1.5 hour walk around downtown La Mesa. What a beautiful (if chilly) California day.

Anyway, I have a whole bunch of food stuffs to catch you up on!

Yesterday Lunch. My favorite Green Giant side dish paired with some SERIOUSLY over-peppered tofu. Woopsie.


(Spicy!!!)





Last night, I used the last of our chicken to make a fantastic Chicken & Cabbage Dish.

Chicken & Cabbage Fantastico

Ingredients
1 Small Head of Cabbage (Green or Purple), chopped
2 Chicken Breasts, Cut into Pieces
1 Package Pre-cooked Rice
2 Cups chicken Broth
Nonstick Cooking Spray
Sea Salt and Black Pepper to taste

Directions
*Chop Chicken in course pieces. Spray a large skillet with nonstick spray and brown chicken.



*I use tons of black pepper on my chicken. Garlic might also work well.

*Remove chicken and add about a 1/2 cup of broth to the skillet. Add in cabbage and cook until tender over medium heat.


 



*Again, I black pepper the heck out of the cabbage.



*Cover and cook until the cabbage is tender. Add broth, as you need, to prevent cabbage from burning. Stir often.

*Once the cabbage is tender, I throw in my pre-cooked rice. (You could also use that pre-cooked rice you can get in the freezer section, I think.)




*Add reserved chicken and mix everything together.





*When everything is warm again, you're done! Easy!



This is also great as leftovers and could probably be frozen for a quick weeknight dinner. I had it for lunch today. Wonderful!

    At what age, did you feel like a "grown up"? I'm still waiting for that to happen.

    Do you love your career? Yes! I've sacrificed financial security to do it, and I never want to take for granted that I'm doing what I love (even if I'm poor!). :D

    How many children do you want to have? I would prefer 2, but Ryan wants 3. We'll see.

    What is your favourite smell? I don't think I have a fav smell! I can't choose one, that's for sure. :)
    At what age, did you feel like a "grown up"? I still don't feel like a grown up and I'm 23! :p
    Do you love your career? I still trying to have one!
    How many children do you want to have? I'm still not sure if I want to have children. It really depends on a lot of stuff. If I do end up having children... never more than 2. Just one wouldn't be bad actually.
    Is it sunny where you are? It's already 9pm so it's nighttime :)

    Is it sunny where you are? No, we are getting some rain which the plants really needed. The ground was dry. Although I think every farmer in NW Indiana was out yesterday tilling. They are probably disapointed.

  6. What is your favourite smell? I have many of those 'scenty' things around the house. I like camu-camu. I don't know what it actually is...probably a mix of a lot of things.

    At what age, did you feel like a "grown up"? Um...19, when I had a baby :)

    Do you love your career? Eh..I don't hate it but I'm looking for something new.

    How many children do you want to have? I have 2 biologically and we are planning on fostering to adopt starting in about 4 years. With adopting...at least 4. No more biological children though :)

    Is it sunny where you are? It's beautiful day here in Alaska! It's sunny and warm (well its 40 degrees which is warm for us). We had the windows open all day long. It was nice to have fresh air after being cooped up for the last 6 months. The best part? It's nine o clock at night and the sun is still high in the air! By the end of this month we will have 19 hours of sunlight at least per day. I LOVE the sun!!!
