Dinner for Lunch: Soyrizo & Broccoli Pasta

Lunch is the new dinner...

Happy Monday blogworld!

This morning, I started off with the usual...


I seem to prefer savory eats in the morning to sweet lately. I wake up and the last thing in the world I want is something ooey and gooey. I'm sure that will change, though.

My sammy took me straight through to lunch. I went through all my cabinets and the fridge and nothing lunch-ish looked good to me.

So... I made dinner...

Soyrizo & Broccoli Pasta

First, I browned the soyrizo crumbles in the skillet and added fresh broccoli.


Next, I got the pasta boiling and poured sauce into the skillet before my broccoli turned black.





Now, THAT's chunky sauce. Yum!

Tonight, I told Ryan I'd go to the gym with him (instead of going by myself this morning), so it will be nice to have dinner already done. All that's left when we get home from the gym is to make a couple salads. Easy Monday night dinner!

Pasta dishes are a frequent on my blog because it's important that whatever I cook can stretch into two or three meals. What other dishes make good leftovers? Any suggestions?

Hubby in the Kitchen: Reader-Inspired Turkey Burger Meal

Good evening guys!!! Thank you SO MUCH for all your wonderful comments on my Weight Loss Surgery post. I promise I will respond to them tomorrow (tonight is a worky worky night for me, sigh...)

I have alot of wonderful food to talk about tonight. Not only is tonight a Hubby in the Kitchen night, but I also made a wonderful two-part lunchie.

Today, I was at the office until 1pm. When I go into the office, I tend to eat a two-part lunch because I can't wait until I get home and fix it. It's just too long. My stomach starts wanting food at noon without fail.

So, today, I had a delicious white peach with Oikos Honey yogurt around noon.

Around 2 when I was home, I made a fantastic Broccoli-Kidney Bean wrap.

I also threw on some of the brown rice from last night's din-din.

It was SO good. The afternoon brought snacky goodness: a few pretzel twists and a frigo light cheesestick when I got home from class.

To my utter delight, I came home to this:

Oh! I almost forgot. Tonight's dinner was suggested by AZLinda of Linda Gets Fit.

Let's see, what's an easy hubby dinner....hmmm....men love to grill..so how about grilled turkey burgers, grilled corn on the cob, and baked sweet potato fries on the side...

Well, Ms Linda, Mr. Myers altered your suggestion a bit... We don't have a porch or balcony and had to give away our grill when we moved here (he was sad).

For real, for real, he made these burgers better than I do! My man can COOK! I ate my burger bunless since the meal was already carb-loaded. And, yes, I do my corn on the cob "off the cob." This meal was heavanly. Even our roommate got in on the action. I really enjoyed this meal. Thanks, AZLinda, for the inspiration!

Since I'm doing Sparkpeople again, I thought I'd give you today's stats:

Calories: 1472
Carbs: 208 grams
Fat: 41 grams
Protein: 85 grams

This is a fairly typical day for me. Discretionary (no-count) calories include no sugar added popsicles and Diet Oceanspray. I'm also a grazer, so basically I realize I take in more than I realize. Unfortunately, this is part of my "deal," so I just roll with it. I would guess I take in around 200 calories more than I account for, which puts me in a very reasonable range.

Ok, so enough of all that food stuffs. Again, thanks for your comments on the last post. I will try to get back to you guys very soon.

Vegetarian Dinner Victory!!!

Two Words... Busy.Day.

Wow. What a whirlwind of a day it's been.

After I left the office, I went to the salon, who is actually becoming a client of mine, so we talked shop a lot of the time, including my favorite part: the shampoo. The whole time I'm trying so hard to enjoy it while discussing marketing like a pro. sigh...

My hair came out cute, though it would be a rare feat for it to be captured well on camera. Good pictures of me are as elusive as Big Foot. Legend has it they've been spotted, but... well... the jury's still out on that one.

When I finally got home, I was ridiculously starving. Lunch was leftovers. A turkey frank in the last orowheat whole wheat bun with some yellow mustard, a few cherries and a sugar cookie from my roommate.

After that quick (and LATE) lunch, I got down to work. I have so much crap to do that I decided if I was ever going to miss class, today would be it. I shouldn't have had the salon appointment today, but I had no idea how much crap would be in my email when I sat down at my desk this afternoon. Sigh... Worked straight until around 5:30-6. Then, made a quick dinner.

Broccoli-Kidney Bean Wraps

Steamed Broccoli Pieces
Kidney Beans, rinsed
Shredded Cheese (I used a light mix of white cheese, swiss, mozz, etc)
Red Pepper Hummus
Whole-Wheat tortillas

Spread the hummus on the tortillas (go light, so it doesn't ooze out when folding). Layer on kidney beans, broccoli and cheese.

[Hubby walks in at this moment and says What meat is going in those? No worries. I promptly sent him out of the kitchen, of course.]

Bake at 350 for 10 minutes.

YUM! Guess who REALLY liked them?! Yep, hubby loved them. Yay! Score one for the hometeam! Since I don't eat red meat, I'm eternally low on iron (not dangerously low, but moderately low). I try to incorporate dark red kidney beans into my diet once per week. Broccoli also contains iron, so this is an excellent, iron-happy combination.

Unfortunately, the roommate brought home a new video game, so Ryan's dinner was spent doing this.
