Us married folk have to find some way to make our lives interesting, right?... hehe...
So, as I said, today was productive. It went something like this...
Take hubby to work... race home to write articles (that were due yesterday woops)... go to a meeting with an author, whose book i'm copyediting... race home to finish articles... head to a cool cafe to work on my book for a couple hours while I waited to meet my friend (a fellow author)... raced to hubby's job to pick him up... came home and snacked on pretzels... blogging (now)...
Phew!!! A day in the life...
Tiring, yes, but I love productive days.
On the food docket, I think we're having leftovers tonight. Here's a foodie recap of the last couple of days... I know I'm not consistent, but I think that's just the reality of my life now that I'm going full steam on my book. :)
Monday Night Dinner: Hormel Pork Roast with Shellie Beans and Quinoa/Brown Rice Mix
(In the background, new library books and a diet 7UP, an occassional treat to myself.)
Now I know that it's really kind of cheating to buy a pre-packaged pork roast that you microwave, serve canned green beans, and microwave-in-the-bag grains... but... well... I guess I'm a cheater. Just so you know, cheating (food cheating) tastes delicious!
Tuesday Lunch: Sliced yellow carrots, navy beans, spinach w/an apple
This is supposed to be a side dish, but it's awesome as a lunch entree.
After lunch, my friend Jess came and rescued me from all the work I've been buried under. Just what I needed. We went to downtown La Mesa to walk around and enjoy the day. We hit up a tasting room (She's a wine enthusiast.).
I watched her taste wine, and we chatted it up with the tasting room manager. He also just so happened to be an inventor. How cool is that?! Have you ever met an inventor before? I hadn't.
He invented this inflatable bag. It's called a wine bearer. It's absolutely the best idea for those that buy wine in another city or state, but don't have a way to get it home without it breaking. Such a good idea!
Then, we had a little retail therapy. I really love dresses. Even when I'm not buying, it's so fun to look.
Jess took some pictures of some flowers, and then I spotted an art gallery.
We finished out our little day with a trip to a really cute boutique.
Last night, I made tuna noodle casserole. I love that stuff. Mine doesn't include breadcrumbs. I promise, you won't even notice they're missing!
Jasmine's No-Breadcrumbs Tuna Noodle Casserole
Ingredients
1 Package No Yolk or Whole Wheat Egg Noodles
2 Cans Tuna in Water (drained)
1 Can Cream of Celery
1 Soup Can Non-fat Milk
1/2 Cup Frozen Peas
Nonstick Cooking Spray
Salt and Pepper for taste
Directions
Preheat oven to 350 degrees. Boil the noodles as directed. Meanwhile, mix all other ingredients in large bowl. Once you've cooked and drained the noodles, stir them into the other ingredients. Spray a 9 x 13 baking dish and pour in mixture. Cover and bake for 20 minutes. Uncover and bake 5 more minutes.
I think, we're having leftover casserole tonight. I'm going to roast some asparagus to go on the side. Yum-o!

I've met a lot of people with crazy professions. I guy who videographs diving with sharks. A guy who started a not for profit and lives in primary rain forest in Panama. I'm always impressed with meeting writers especially ones where I love their work and agree with them morally. We should meet sometime! lol

Okay, so I was reading your blog and I am insanely jealous of your job, even if I'm sure it's insanely hectic. I went to school for journalism and English... Dreaming of the day that writing articles and working on my novel is my work. :) But for now, I'll live my dream through your blog. Ha, ha.
