Two Words... Busy.Day.
Wow. What a whirlwind of a day it's been.
After I left the office, I went to the salon, who is actually becoming a client of mine, so we talked shop a lot of the time, including my favorite part: the shampoo. The whole time I'm trying so hard to enjoy it while discussing marketing like a pro. sigh...
My hair came out cute, though it would be a rare feat for it to be captured well on camera. Good pictures of me are as elusive as Big Foot. Legend has it they've been spotted, but... well... the jury's still out on that one.
When I finally got home, I was ridiculously starving. Lunch was leftovers. A turkey frank in the last orowheat whole wheat bun with some yellow mustard, a few cherries and a sugar cookie from my roommate.
After that quick (and LATE) lunch, I got down to work. I have so much crap to do that I decided if I was ever going to miss class, today would be it. I shouldn't have had the salon appointment today, but I had no idea how much crap would be in my email when I sat down at my desk this afternoon. Sigh... Worked straight until around 5:30-6. Then, made a quick dinner.
Broccoli-Kidney Bean Wraps
Steamed Broccoli Pieces
Kidney Beans, rinsed
Shredded Cheese (I used a light mix of white cheese, swiss, mozz, etc)
Red Pepper Hummus
Whole-Wheat tortillas
Spread the hummus on the tortillas (go light, so it doesn't ooze out when folding). Layer on kidney beans, broccoli and cheese.
[Hubby walks in at this moment and says What meat is going in those? No worries. I promptly sent him out of the kitchen, of course.]
Fold.
Bake at 350 for 10 minutes.
YUM! Guess who REALLY liked them?! Yep, hubby loved them. Yay! Score one for the hometeam! Since I don't eat red meat, I'm eternally low on iron (not dangerously low, but moderately low). I try to incorporate dark red kidney beans into my diet once per week. Broccoli also contains iron, so this is an excellent, iron-happy combination.
Unfortunately, the roommate brought home a new video game, so Ryan's dinner was spent doing this.
